As the sugarcane industry continues its transition into Hawaii’s history, exciting and unusual specialty crops have been growing to fill the void left in the state’s rich agricultural heritage. Hawaii’s diverse climate continues to attract new generations of farmers and philosophies that are producing artisanal crops such as the Ali’i mushroom (Pleurotus eryngii), tea (Camellia sinensis) and vanilla (V. planifolia). By the end of the day, participants will become familiar with both environmental and economic challenges faced by small specialty crop farms on the Big Island and be able to bring home some uniquely grown and processed gourmet produce as souvenirs.
